🥞 Here’s a simple pancake recipe (thin crepe-style pancakes) 🥞
Ingredients (Makes about 6-8 pancakes)
• 100g plain flour
• 2 large eggs
• 300ml milk
• 1 tbsp vegetable oil (plus extra for frying)
• Pinch of salt
Method
1. Make the batter:
• In a bowl, whisk the flour, eggs, milk, oil, and salt until smooth.
• Alternatively, blend everything in a food processor.
2. Rest the batter (optional but recommended):
• Let it sit for 15-30 minutes for a smoother texture.
3. Cook the pancakes:
• Heat a non-stick frying pan over medium heat and lightly grease it with oil.
• Pour in a small ladle of batter, swirling the pan to spread it evenly.
• Cook for about 1 minute, until golden underneath, then flip and cook for another 30 seconds.
4. Serve:
• Stack them up and serve with your favourite toppings, e.g. lemon & sugar, Nutella, or golden syrup.
